Scotch bonnets take their name from the appearance of tartan bonnets, which they actually resemble with a little imagination. They are a nicely spicy habanero variety with a fruity flavour. They are particularly suitable for making hot and sweet sauces. In their Caribbean homeland, Scotch Bonnets are often used in dishes with fish and white meats in combination with tropical fruits. When heated, however, the fruit flavour of the pods is largely lost, so the later you add them to the food, the more tropical-fresh flavour remains. If you have too much fruit in autumn to process it directly, you can dry it without any problem.

Germination and growing

To get this variety to germinate, you should provide them with an environment with a temperature between 22 and 28 °C. A heated greenhouse is ideal for this. Whether you pre-germinate the seeds in two layers of kitchen roll or let them grow directly in soil is entirely up to you. When you place the seedlings in pots, you should use a well-fertilised and airy soil and make sure that the water does not accumulate. Chilli plants need a lot of sun for their development and certain minimum temperatures for the ripening of the fruits. Therefore, place them in a suitable spot where they will get at least 6-8 hours of sun and plant them in pots rather than flower pots. This makes it easier to bring them indoors in early autumn on days with temperatures below 12 °C - so the fruits can still ripen despite the sometimes long ripening period.
